Pasta e Fagioli or Pasta e Fasule, Pasta with beans as it translates is a traditional Italian homestyle soup that is belly warming, nourishing and tastes like a big warm hug from Nonna. My mother in law (Nonna) always makes homemade pasta with this dish. Another quick and easy weekday dinner to share with you, gnocchi with a few ingredients and a creamy sauce. Gnocchi if you aren’t familiar with it are small potato dumplings traditionally made with mashed potato and flour. You could always make your own gnocchi and freeze them for a quick homemade meal mid- week or easy entertaining on weekends. We all need shortcuts in our lives from time to time so store bought are perfectly fine too.
Summer holidays have come to an end, for myself it’s a little bitter sweet. Whilst I am over the sibling fighting and constant complaints of boredom I actually really enjoyed having my kids home these holidays. We have spent a lot of quality time together over the past two months swimming, fishing, boating, days at the beach, theme parks, bike rides, movie dates, picnics in the park we really have done it all. One of my all time guilty pleasures is pasta, I mean who doesn’t love pasta?
I try not to eat it too regularly but when I do I make it worth it. There is just something so satisfying about a big bowl of pasta with a homemade sauce that is so utterly gratifying, you know what im talking about.
I like to use spelt pasta or quinoa pasta when I can as an alternative . I find the spelt pasta the closest in flavour and texture though without the heavy carb feeling afterwards. Spelt is low in GI so has slow releasing energy rather complex carbohydrates that gives us that full sluggish feeling, making it harder to digest. However, it is not gluten-free so if that is your requirement use quinoa or a grain pasta instead. (more…)
One thing I’m big on is hidden preservatives in food. I try to avoid them like the plague. Sadly there is too many quick meal options targeted at us in the supermarkets that a filled with the stuff. I called this “The Real Deal” because it is just that REAL. Made with REAL ingredients and tastes fresh, light and tasty. Took me 35 mins to make from start to finish.
