Spinach and Ricotta Zucchini Involtinis

Ricotta is one of my favourite soft cheeses and regularly used in Italian cooking. It’s soft smooth creamy consistency and mild flavour make is a perfect ingredient for pasta fillings, bread toppings, and in both savoury and sweet recipes.

Fresh is definitely best when it comes to buying ricotta, I highly recommend buying from a reputably Italian delis or supermarket that sells it fresh. If buying packaged you can find them cryovac sealed in a strainer for ultimate freshness.

This recipe though timely, is worth the extra effort. If you have made your own pre made sauce that will cut the time significantly. I know I say this a lot but it is true…like a lot of Italian home cooking, basic fresh ingredients cooked right make the most flavoursome meals.

I have opted to use thinly sliced zucchini ribbons to wrap the ricotta mixture in instead of traditional eggplant or pasta for a more nutritious carb free option.

Flourless Lemon Syrup Cake

Combining my two loves of teacake and citrus this Lemon Syrup Cake ticks all the boxes. Made with almond meal so it is gluten free, also sugar free and deliciously soft and fluffy. Lemon in baking would have to be one of my all time favourite ingredients, it’s not heavy or sickening and the zesty citrus and honey gives just the right amount of sweet/sour combination.

Best Ever Creamy Cauliflower Mash

This seriously is the best mash I’ve ever made. If you are a lover of cauliflower or even if you are not this mash is so darn delicious. Silky smooth and creamy you wouldn’t even know it consists mainly of cauliflower.

Hidden Veggie Meatloaf with Tomato Glaze

Family dinner with young kids can be tricky as much as you’d love them to eat every vegetable you eat sometimes it just seems impossible and not to mention stressful. I get it my kids have their moments too let me assure you.

Visually vegetables are an instant turn off for most kids, seeing the amount they have to eat each night already gets them in a bother. Sometimes we have to get creative and hide them in food they do like. Let’s be real as much as those cute food pictures that look like a butterflies or funny faces made out of veggies or cookie cutout salads look visually stimulating but who really has time to do that every night? Hiding them or mixing them in other foods just seems to be a much less time consuming and gimmicky way of getting their daily serve of veggies.

Better for you Fudgy Chocolate Brownies

Everyone loves a fudgy brownie the indulgent treat that most people feel incredibly guilty with each mouthful. But what if I told you, you can make them better for you?

Did you know that the average Australian consumes 3 times the amount of added sugar daily?

That is a huge increase over the years, while our recommended daily intake is only 6 teaspoons of sugar per day for women and 9 teaspoons for men an average Australian is consuming up around 17 teaspoons that’s around 70g of sugar a day! It’s as little as having a glass of  store-bought orange juice and pre packaged cereal for breakfast with store-bought muesli bar or muffin for morning tea. They all contain added sugar which is hidden and without even knowing it you are already over your daily intake and you havent even had lunch yet.  (more…)
