Portuguese Chicken Skewers with Garlic Yoghurt

Serve it with some soft tortillas, charred lemon or cooked corn cobs but my favourite now is with my Hasselback Sweet Potatoes with Basil Pesto . A family feast to satisfy a hungry brood! 

This is such a handy spice recipe to have I use this on a variety of chicken dishes such as whole roast chickens, chicken drumsticks, chicken burritos and these char grilled chicken skewers. You have the option to have it hot and spicy or by leaving out the Cayenne Pepper you can have it mild for the kids if they prefer.

Portuguese Chicken Skewers with Garlic Yoghurt

Ingredients

2 teaspoons dried oregano

3 teaspoons paprika

2 garlic cloves crushed

1 teaspoons ground cardamom

1 teaspoons ground ginger

1/2 tsp each salt and pepper

1 teaspoon cayenne pepper (optional hot)+

2 tbsp olive oil

700g chicken breasts largely diced

12 sage sprigs or rosemary

1 lemon cut in half

1 cup natural yoghurt

3 garlic cloves crushed

Salt and Pepper to taste

Directions

  1. Make spice rub, mix oregano, paprika, cardamom, ginger, salt and pepper and cayenne (optional) in a bowl mix well
  2. Place diced chicken in a large bowl coat with olive oil and crushed garlic
  3. Coat chicken with the spice mix
  4. Thread chicken pieces onto skewers (if using wooden soak in water beforehand to make sure they don’t burn) placing sage sprigs in between every 2-3 pieces
  5. Preheat grill pan on high heat
  6. Cook for 3-4mins each side until cooked through
  7. Meanwhile mix yoghurt with remaining garlic and season to taste
  8. After chicken is cooked place the two lemon halves on the grill for 3-4 mins
  9. Serve skewers with lemon and yoghurt
