It’s back to school time!
It was the first week back of term this week QLD and for the rest soon approaching. There was mixed feelings sending them on their merry way this week with a combination of excitement but also unwillingness to get back into the hectic routine. The hardest part of the holidays for me is always trying to keep the kids entertained. With three active boys can be somewhat difficult at times to keep up with their incessant amount of energy and boredom kicks in very quickly, which soon turns into mischief, fighting, whingeing and tears.
It definitely isn’t all as bad as it seems, later wake ups and relaxed routine can be quite a nice change and spending time with my boys is something I do treasure as it won’t be to long before they won’t want to hang out with their mum and do dorky kids activities so I savor the moments. Take deeps breaths and live in the moment to enjoy what time we have together.
One thing they do love is helping me bake so we filled in some time making some healthy lunchbox treats to pack for school snacks when they returned. Getting kids involved in cooking not only is a valuable life skill to teach them for their future but it also teaches them how food is prepared, made and what actually goes into it. The best thing though is seeing their little faces fill with sense of accomplishment when they have finished the job. They have a different appreciation not just on food but also the effort you put into preparing their food each day.
Here is an easy refined sugarfree and nut-free oat bar recipe, perfect for the school lunch boxes and also great adult snacks on the go.
Apricot & Honey Oat Bars
*NUT-FREE *REFINED SUGAR-FREE
Ingredients
215g butter
1/3 cup organic raw honey
1 1/2 cup rolled oats
1/2 cup brown rice flour
200g dried apricots chopped
1 tbsp white chia seeds
1 tbsp sesame seeds
1/3 cup desiccated coconut
Directions
- Preheat oven to 140’C line a 20x30cm slice tin with baking paper
- Melt butter and honey in a small saucepan on low heat
- In a large bowl place all remaining ingredients, pour in the melted butter and honey
- Mix well to coat, pour into the tin spread and press down evenly into the tin
- Bake in the oven for 40-45mins till golden
- Leave in the tin till completely cool before slicing
