Miso Tofu Ramen Noodles


Did you know Japan has the longest life expectancy in the world?

A major factor is their diet and lifestyle, lots of fish vs meat, less dairy, high in soy based foods, rice with every meal, tea drinking and of course loads of  vegetables. Miso Soup is a staple in Japanese culture by adding the soba noodles becomes a ramen dish. Ramen is a Japanese soup dish which consists of noodles in a soy or miso broth with either meat, fish or tofu. Tofu is another amazing nutritional ingredient made from soybeans and is a great source of protein, iron, calcium and contains all 8 essential amino acids. Perfect for a healthy meatless Monday meal and takes no time at all.

Miso Tofu Ramen

A healthy soup dish with amazing nutritional benefits


4 cups water

2 tablespoons white miso paste

1tbs soy sauce or tamari

3 spring onions sliced

1 bunch asian greens such as bok choy or pak choy

1/2 cup dried shiitake mushrooms

200g soba noodles

200g firm tofu sliced into cubes


  1. Place water in a saucepan with the miso paste, soy sauce and bring to the boil
  2. Once boiling add the spring onions, greens, mushrooms and noodles turn heat down to low simmer for 3-4 mins or until noodles are cooked and mushrooms have rehydrated
  3. Add the tofu and serve immediately
