Not Your Typical Caesar Salad

My homegrown kale has flourished and was ready for picking so it was only natural to make a beautiful fresh salad for lunch. This is a healthy twist on a typical Caesar salad.

Kale Caesar Salad with Avocado Dressing


Kale leaves roughly torn

1/2 avocado sliced

1 poached or boiled egg

2 pieces sourdough bread

Grated Parmesan Cheese


1/2 Avocado

2 tb natural greek yoghurt

1/2 lemon juiced and grated rind

1 tb olive oil

Salt and Pepper


  1. Make dressing, place all dressing ingredients into a food processor and blitz till smooth and creamy
  2. Boil egg and  slice and toast sourdough
  3. In a bowl place kale, sliced avocado, sourdough croutons, egg and grated parmesan
  4. Mix through dressing
